Pumpkin Spice Cookies

Kelly's Recipe: Pumpkin Spice Cookies

Since it's almost Thanksgiving and autumn is already here, why not get festive and add pumpkin spice to everything! Just kidding...not really. My pumpkin spice cookies are definitely a great way to kick off fall and to enjoy a festive sweet treat.




Ingredients:

For the cookies:

1/2 cup butter

1 cup of white sugar

1 3/4 cup flour

2 tsp of pumpkin spice

1/2 cup pumpkin puree

1 egg

*add 1tsp of cinnamon, optional

Preparation:

1) Preheat oven to 350 F

2) Cream butter and sugar together in a large bowl, until light and fluffy.

3) Beat in one egg, then mix in the pumpkin puree

4) In a separate bowl, combine flour and pumpkin spice.

5) Combine dry ingredients with the wet ingredients and mix thouroughly.

6) Wrap cookie mixture in to a plastic wrap and chill in the refrigerator for 1-2hrs until firm enough to roll.

7) Roll dough on a floured surface and into 1/4 inch thickness. Cut with a 3-4 inch cookie cutter. Preferrably pumpkin shaped :)

8) Place cookies on a lightly greased baking pan annd bake for 12-14mins.

*before topping with cream icing wait until cookies are completely cooled down.


For the cream cheese icing:

250g of cream cheese

2 cups of icing sugar

1/2 tsp pf vanilla extract

1/2 tsp of pumpkin spice

orange food coulouring


Preparations:

1) Whip cream cheese and icing sugar in a large bowl.

2) Add in vanilla, pumpkin spice and orange food colouring and mix very well.

3) Transfer to piping bag to decorate the cookies.

*If you do not own a piping bag, use a plastic bag and squeeze all the icing to one corner of the plastic bag, then cut the corner of the bag and pipe.
