My Brown Butter Tomato and Goat Cheese Salad

If your looking for a salad that is versatile and pairs with almost any meal, then your looking right at it! My brown butter tomato and goat cheese salad is great for a roast dinner with the family or even a weekday meal with your favourite pasta dish. This dish is not only delicous as is, but a great side dish for either a casual or sophisticated dinner. The creaminess of the goat cheese with the buttery tomatos on a bed of spinach is so simple yet delectable. Check the ingredients listed below for more!












Serves: 2-3

Ingredients:

3 large handfuls of spinach
*If you don't want to use spinach, arugula is great as well!

2 large handfuls of cherry tomatos (whole)

1/4 cup butter

1/2 cup chopped pecans

1/3 cup goat cheese or cranberry goat cheese (feel free to add as much as you would like)

pinch of black pepper and salt

half the juice of a lemon

3 tbsp olive oil


Preparation:

1. Wash spinach and cherry tomatos before use.

2. Chop spinach leaves into neat ribbon size pieces.
2. If using arugala for the salad, leave as is.

3. Drizzle lemon juice and olive oil over the spinach and toss to coat the leaves.

4. On Medium to High heat, add in butter and cook until it becomes golden brown.

5. Add in cherry tomatos and sauté until the skin of the tomato looks shriveled.

6. Add in chopped pecans and a pinch of salt and sauté for another 2 mins.

7. Add the brown butter cherry tomatoes and pecans over top the spinach leaves (make sure to pour any remaining butter from the pan onto the spinach too!)

8. Last but not least crumble your goat cheese over top the salad and add a few cracks of fresh black pepper.

Voila, your mouth watering browned butter tomato and goat cheese salad is ready to eat and serve as a side dish in one of your family favourite meals!
