My Green Goddess Frittata

Kelly's Recipe: My Green Goddess Frittata.

My Green Goddess Frittata is great for a weekend breakfast or brunch with the family. This dish can be devoured just by itself or part of a big breakfast feast. It's so simple to make, therefore making it easy for you to follow along without any stress! These few simple ingredients is all it takes to make this eggcellent frittata! Serves: 3-4

Ingredients:

8 eggs

2/3 cup half and half cream

1/3 cup goat cheese

1  1/2 cups of asparagus

1 handful of spinach

1 handful of arugula

4 scallions

2 tbsp fresh parsley

1  1/2 tsp garlic powder

1  1/2 tsp Johhny's Garlic seasoning

1/4 tsp paprika

2 tsp salt

1/2 tsp black pepper


Preparation:

1. Pre-heat oven to 375 F

2. Wash all vegetables before use.

3. Chop spinach, arugala and scallions into small bite size pieces.

4. Chop asparagus into quarters and blanch for 5 mins.

5. Crack eggs into a bowl and whisk in the half and half cream.

6. Add all spices to the egg mixture and whisk ti'll spices are evenly integrated throughout the mixture.

7. Spray your 9 inch pie dish with cooking spray or grease with butter.

8. Spread your spinach and arugala evenly on the bottom of the pie dish, then dispurse the asparagus over top.

9. Take your egg mixture and pour evenly over the top of the asparagus and greens.

10. Lastly, crumble your goat cheese on top of the eggs and greens, then bake in the oven for 20-25 mins.

Tip: Feel free to serve it on a bed of arugula with a drizzle of olive oil and a squeeze of lemon juice.
